Slowly caramelise sliced onions in olive oil 35–45 minutes with a pinch of salt; cool slightly.
Preheat the oven to 230°C. Roll out pizza or bread dough on a tray.
Spread onions; arrange anchovy fillets in a lattice and add small black olives.
Bake 15–18 minutes until edges are golden and crisp.
