Separate the egg whites from the yolks
In a bowl, mix the egg yolks with the sugar and 75 grams of chocolate previously melted
In another bowl, mount the egg whites in snow
Once the egg whites are well firm, incorporate into the egg yolk mixture, sugar and chocolate to form a foam
Cover the bottom of a 20 cm hinge mold of plastic film
Dip each boudoir in the bowl of water, then arrange around and at the bottom of the mold
Pour the chocolate mousse into the mold. Cover with boudoirs dipped in water and plastic film before putting in the refrigerator
Unmold the charlotte and decorate with the rest of the melted chocolate and the cream
Leave cool for a few minutes before serving.
