Wash the zucchini and dice them without peeling them
In a frying pan, brown the zucchini in the heated olive oil. Add the minced shallot, cumin, Provence herbs and a pinch of salt. Cook in the open for about 5 minutes
In a saucepan of boiling salted water, immerse the pasta and cook them according to the time indicated on the packaging. Drain them and keep 150 milliliters of cooking water
Pour the pasta into the pan containing the zucchini, add 100 milliliters of cooking water and the grated cheese. Stir and cook for 2 minutes. If the pasta sticks to the bottom of the pan, pour the remaining 50 milliliters of cooking water
Place everything on a service plate and sprinkle with grated cheese according to your tastes.
