Remove endives with withered leaves, curly point and the heart by digging the foot with a knife, then rinse them under cold water and drain them.
Heat 10 grams of butter. Brown the endives over medium heat for 5 minutes. Place them in an oven dish.
Preheat the oven to 210°C
Melt the remaining butter in a saucepan, then add the flour off the heat and mix it with butter. Then add the milk over several times and whisk.
Return the pan hard on the heat and let the béchamel thicken over low heat. Then add the salt, the pepper, the nutmeg and half the grated cheese.
Wrap the endives in a slice of white ham then coat it all with the béchamel. Sprinkle the breadcrumbs and the rest of the cheese over it.
Put in the oven for 15 minutes.
Serve hot.
