Preheat the oven to 210°C.
Cut each bok choy in half lengthwise, then place them on a plate. Drizzle with olive oil and a few pepper grains. Cook in the oven of 8 minutes.
Meanwhile, in a small bowl, mix the sesame oil, soy sauce, vinegar and maple syrup.
Put the Bok Choy on a dish, pour the vinaigrette overcoat and sprinkle with sesame seeds.
Serve.
