Sort the salad sheets, cut the hearts in half and wash them.
Peel the garlic cloves.
Immerse the lettuce for 5 minutes in 25 centilitres of water over low heat and add 10 centilitres of white wine, then drain them.
Tie the lettuces, then melt the butter in a casserole dish and place the lettuce. Add salt and pepper.
Make them in the open, then add the garlic cloves and the bouquet garni. Cover and cook for 20 minutes.
Serve with the cooking juices.
