The parsley consists of green leaves and fine stems which can be used fresh or dried. It has a slightly aniseed taste and is often used in marinades, sauces, soups and salads. The parsley is also rich in vitamins and minerals, in particular vitamin C, vitamin K and iron. There are two types of parsley commonly used in the kitchen: flat parsley and curly parsley. Flat parsley has wider and flat leaves than curly parsley, and it is often used as decoration for dishes. Curly parsley, meanwhile, has smaller and more curly leaves and is often used in simmered dishes and sauces.
