Start by preparing the dressing by putting all the ingredients except the oil in a blender, then add the oil in a thin stream through the hole in the lid while running the blender.
If the sauce is too thick, add oil and whisk. For a lighter version, replace some of the oil with water.
Wash and pat dry the lettuce, cut into bite-sized pieces and place in a large bowl.
Add the sundried tomatoes, chicken, and croutons, then add the dressing and toss the salad. Garnish with Parmesan cheese.
