Season, flour and pepper the dab fillets before grilling them in hot oil for 2 to 3 minutes on each side.
Then place them in a serving dish and keep them warm.
In a small saucepan, grate the zest of one lemon and squeeze it to extract the juice.
Pour the juice into the pan and heat, adding instant stock to season.
Whisk well while adding small pieces of butter to emulsify.
Coat the dab fillets with the lemon butter and sprinkle with chopped chives.
