Preheat your oven to 210°C and apply butter to a pie pan.
Wash the leeks, then cut them finely. In a frying pan with the oil, then put them over low heat for about 20 minutes. Do not forget to stir them frequently, salt them and pepper them.
Beat your cream with the eggs and 01 yellow in a bowl. Add pepper, salt and the leeks previously prepared.
Place the dough in its mold and prick the bottom using a fork. Pour the leek cream on the bottom of the pie.
Finally, put in the oven for about 35 minutes and serve hot.
