Beat an egg with icing sugar and 35 grams of sugar and salt in a bowl.
Add flour, 100 grams of butter and knead.
Form a ball with the dough and film it, before putting it in the fridge for an hour.
Spread it on a pie dish and cover it with clay balls.
Cooking must be done in 10 minutes at a temperature of 180°C. Then remove the weight and put the dough back into the oven for 8 to 10 minutes.
To make the lemon cream, bring the zest and lemon juice to a boil.
Beat 2 eggs with cornstarch and 100 grams of sugar in a bowl
By whisking, gradually add the lemon juice.
To thicken the whole, put it on a medium heat, stirring constantly.
After obtaining a cream, let cool and put pieces of soft butter from it. You can then garnish the pie bottom with this cream.
To prepare the meringue, whisk 01 egg white and add the rest of the sugar. Then garnish the pie, using a pastry bag.
