First peel the potatoes and cut them into pieces
Cook them in a saucepan containing boiling salted water
Drain the potatoes once they are tender
Using a potato gap, mash the cooked potatoes and add the pieces of butter
Dry the puree obtained over low heat. Off the heat, add the egg yolks
Add the grated nutmeg
Salt and pepper the puree
Shape traffic jams with your hands
Roll them in the flour, then dip them in the 2 whole beaten eggs in an omelet and in the breadcrumbs
In a fryer, heat the oil and immerse the potato kibbles in it
Place the well golden kibble on absorbent paper and taste.
