Peel the potatoes and cut them into sticks. To remove excess starch, soak the raw fries for 10 minutes in cold water. Take them out and wipe them with absorbent paper.
Heat the frying oil at 150°C. Immerse half of the fries and cook for 10 minutes. Drain them and let them cool. Repeat the operation with the other half of the fries.
Mount the oil temperature at 180°C. Before serving, immerse the fries in the oil, always in 2 batches for 5 minutes to brown them. Serve immediately with the molds.
Carefully scrape the molds and wash. Drain and keep cool. Eliminate those which rise to the surface, which are broken or open.
Finely peel and chop the shallots. Finely cut the parsley. Peel and chop the garlic. Melt the butter in a large casserole dish. Add the shallots and brown for a few minutes.
Add the garlic, parsley and molds to the casserole dish. Drizzle with white wine and pepper. Cover and cook over high heat for 7 minutes, mixing from time to time. Throw those who did not open at the end of this cooking time.
