Wash and cut the red cabbage finely. Add a drizzle of olive oil, lemon juice and a pinch of salt. Massage for 5 minutes.
Cut the feta into pieces. Peel the carrot and cut it finely.
For the salad sauce mixing the olive oil, lemon juice, balsamic vinegar and add a pinch of salt and pepper.
Mix the red cabbage, carrot and salad sauce, then add a little parsley and sprinkle with feta.
