Prepare the marinade the day before, mixing all the ingredients and let the meat marinate overnight.
Remove the pieces of meat from the marinade the next day and drain them before browning them with chopped onions and diced salt pork.
Add garlic, anchovies, olives, and pastis, then pour in the reserved marinade and carrots before simmering for 3 to 4 hours. To thicken the sauce, add dark chocolate at the end of cooking.
Serve with plain rice.
