Start by preheating the oven to 180°C.
Mix the flour, butter, oil and water, then add the egg yolk.
Season with salt and work the dough well.
Spread the dough in a mold, prick it and bake for 10 minutes.
Whisk together the egg and cream. Season with salt and pepper and add a pinch of nutmeg.
Place a layer of potatoes, already cooked and cut into slices, on the tart, peppering them.
Spread the cheese slices over the potatoes and pour the cream mixture over the top.
Bake for 40 minutes.
