First, prepare the tartar sauce by finely chopping a shallot and fresh herbs.
Beat the egg yolks, add peanut oil to make mayonnaise, then stir in the vinegar, shallot, and herbs. Season to taste and refrigerate.
Next, prepare the breaded sea bream fillets by crushing cornflakes and breadcrumbs in a deep plate.
In two other plates, add flour and beat an egg. Season the sea bream fillets with salt and pepper and coat them in the flour, egg, and cornflake and breadcrumb mixture.
Fry them in hot oil for 5 to 10 minutes until golden brown and crispy.
Drain them on paper towels and serve them hot with tartar sauce and fresh lemon wedges.
