In a pan, brown the diced bacon and the minced onion and sprinkle them with flour. Mix everything until the flour becomes blonde.
In another pan, brown the mushrooms previously minced by adding a little butter.
Mix this preparation with the ingredients of the first pan. Add the bouquet garni, garlic and sugar. Deglaze with the wine and season.
Lower the heat and cook for about 45 minutes until the sauce is creamy.
Brown the garlic rubbing croutons in butter.
Pocket the eggs in a saucepan of simmering water added with vinegar.
In each service plate, set up the croutons and the poached egg and pour a little sauce.
