Mix the sugar, crushed garlic, salt, bay leaves and 2 glasses of water.
Cover the meat completely with the prepared mixture, cover and leave for 24 hours in the refrigerator. After this time, take the meat out of the marinade, rinse it and dry it.
Mix the honey with soy sauce, oil, pepper and soft smoked paprika. Spread everything on the chicken and let it rest for another 24 hours in the refrigerator in a covered dish.
Tie the meat with a kitchen string over its entire length. Place it in the oven at 180°C for about 1 hour, wrapped in aluminum foil. Leave the aluminum sheet slightly open so that the meat can breathe.
Leave to cool for 10 minutes, then cut the meat finely.
