To prepare shark steaks, start by removing the skin and rinsing it under running water before drying it with paper towels.
Heat a pan with a little oil and add the shark portions, pressing them into the bottom so they are well browned.
Reduce heat and cook for 5 minutes before turning the portions over and cooking for an additional 4 to 5 minutes.
Remove the pan from the heat once the steaks are cooked.
In another pan, fry chopped shallots with oil.
In a bowl, mix crème fraîche, curry, mustard, salt and pepper.
Pour a little vinegar into the pan with the shallots, add the mixture to the crème fraîche, stir and add honey.
Heat everything for a few minutes and coat the shark steaks with this sauce.
