Preheat the oven to 180°C
Melt the butter and 10 grams of chocolate over low heat
Beat together 15 grams of honey, egg and sugar
Add the flour, almond powder and baking powder
Once the cocoa is sifted, add it, then mix with your whisk until the dough is homogeneous
Add the rum and 20 grams of liquid cream
Add the chocolate and the melted butter, then continue to mix
After placing a sheet of baking paper on the plate of your oven, place the 18 cm circles in it
Once the dough is divided into equal parts in the circles, bake at 180°C for 10 minutes
Remove the circles once the cookies have cooled.
For the chocolate ganache, melt the rest of the chocolate in a double boiler
Heat the rest of the cream with 10 grams of honey
Pour a third of cream over the rest of the chocolate
Emulsify the ganache: to do this, mix with a maryse
Add a 2nd third, then continue to mix
After adding the last third of cream, mix the ganache using a hand blender for 3 minutes.
