Step 1

Rinse the tongue with cold water. Put all the ingredients in a pot of cold water, and add the beef tongue; Cover and cook for 3 hours. After cooking, remove the tongue; Let cool and remove the skin. Put the tongue and the broth in the fridge for the night.

Step 2

Melt the butter, then add the flour; Let brown while stirring. Add, part of the broth, avoiding lumps, pour the tomato sauce and add the shallot and pickles.

Step 3
