Brown 1 chopped onion and 2 cloves of garlic in a little olive oil. Add the crushed tomatoes, tomato puree, cumin, turmeric, espelette pepper, salt, water so as to cover 6 potatoes cut into cube.
Cook for 20 minutes.
Cook the merguez at the grill. Then add them to the rest. Cook for 10 more minutes.
Sprinkle with parsley and serve.
