Start preheating the oven to 150°C.
Heat the milk, cream and sliced brie, then blend everything in a blender.
In a bowl, whisk the eggs then pour in the brie mixture.
Season with salt, pepper and paprika.
Pour the cream into jars and bake them in a bain-marie for 30 minutes.
Let the creams cool and then place them in the refrigerator for two hours.
Sprinkle with brown sugar and burn them with a blowtorch.
Coat the apple cubes in the melted butter.
Insert 3 apple cubes with a slice of smoked bacon.
Bake the skewers for 5 minutes at 180°C.
Prepare a vinaigrette by mixing vinegar, hazelnut oil, salt and pepper.
Place arugula leaves on each crème brûlée, sprinkle with hazelnuts, and drizzle with a little vinaigrette.
